Andrzej Bałdyga

Andrzej Bałdyga, a recognised Chef, who has been the Executive Chef at the Bryza Resort&Spa Hotel in Jurata for the last several years, is responsible for all catering concepts in the facility.

His showcase is the Polish cuisine, where quality products play the main role. The unprecedented flavour combinations and dish presentation show creativity and sophistication.

He is especially keen on fish and seafood.

He participated in culinary competitions, where he frequently stood on the podium.

He was involved in numerous projects raising the level of education in catering schools – both for students and teachers. He received a Medal of the Minister of National Education for activity in that area.

In the recent years, he has been supporting newly built hotels and restaurants. He is a manager involved in every single process – from staff selection, through trainings, up to the implementation of marketing and sales strategies of a given facility.

Wave Restaurant

The assumptions of the cuisine will be based on the seasonal nature of products, combination of the Polish regional cuisine with accents from faraway parts of the world. Even the most demanding palates will find something for themselves here.

Dishes will be prepared from fish from the local catch and products from the local farms. All will be complemented with a selection of Polish wines and distillates.
